Today my First was to have a Frito Pie. We had a Frito Pie potluck at work. I never quite understood what a Frito pie was…it has Fritos in it and it’s called a pie. Is it a dessert? People eat it as a meal, so is it the main course? I just never knew. So then, what is a Frito Pie, you ask? It is a bowl of deliciousness. Ordinarily it is made with Fritos corn chips, meat, beans, cheese, etc. Since I don’t eat beef, I made mine with chicken and it was scrumptious. I had Fritos, chicken, pinto beans, cheese, lettuce, tomatoes, onions and New Mexico red chile. The New Mexico red chile is the game changer.

If you don’t live in New Mexico or the southwest then you are not aware of the ongoing battle between red and green chile. It’s kind of like the Marvel vs. DC rivalry; Raiders vs. 49ers; Pepsi vs. Coke; Microsoft vs. Apple; Cats vs Dogs; Biggie vs. Tupac; Kanye vs. Taylor; Good vs. Evil. Yes, it’s that big. I usually always prefer green to red, but the red tasted great on the Frito pie. Just don’t call it salsa…eek!
