Today I needed a new idea for dinner so I went on the interwebs and chose the FIRST recipe that jumped out at me on Pinterest (thank goodness it wasn’t a recipe for beef tongue or liver). The recipe was for a cheesy, garlicky chicken and potato casserole. Mmmm…mmm…good. It was submitted by Dizzy Busy and Hungry! (love the name, darlin’). And love the recipe. We chowed down on this dish of cheesy, garlicky goodness. I skipped the potatoes on my portion and replaced it with an arugula salad. I know, I know…boring but I can’t have carbs ’til the weekend. Gimme a break!
- Boneless, Skinless, Chicken Thighs
- Olive Oil
- Fresh Mozzarella Cheese
- Sea Salt
They all end up in the same baking dish together and melt into one another in an orgy of gooey goodness. This is insanely simple and delicious. The mozzarella is the game changer. Delicious. Thank you, Dizzy Busy.
