This is what I have to say after almost one entire year of trying new things: sometimes it works, sometimes not. I tried a paleo, primal, gluten-free gingerbread person cookie recipe today with the kiddos for the first time. First time paleo, first time gingerbread. Let’s just chalk this one up as practice, shall we? Our gingerbread people did not even resemble anything human and the ginger bread came out more like ginger cement. Super crispy. One thing to know about this recipe: USE PARCHMENT PAPER. If you find that you have forgotten to purchase this item at the store and you think, “I can just use the cookie sheet” THINK AGAIN. These cookies bind to the cookie sheet like quick-set concrete. These poor kids that have been forced to go along on these “Firsts” with me. First the Sandia Crest, now this. I was totally prepared to go back to the store and buy them gingerbread cookies, I felt so bad about this one. They ate them though, bless their hearts.
